Ermine Ameraucana

Ermine Ameraucana – A Rare Beauty with Blue Eggs and a Unique History

If you're looking for a chicken breed that's not just beautiful but also productive and friendly, you have to check out our Ermine Ameraucanas. These aren’t your average backyard birds. They’ve got stunning white feathers with black flecks around their neck and tails—kind of like a snowy ermine coat. It’s a newer and super rare color variety within the Ameraucana breed that we’re proud to be developing here at Paragon Hatchery.

Ermine Ameraucanas come from carefully selected white Ameraucana lines called Dominant White that carried hidden genetics for these gorgeous black accents. Through intentional breeding, years of work and a lot of patience, Ermines are a breed from Becky Pelton’s experimental ‘Ermine’ Ameraucana project—and it’s absolutely worth the wait. Not only are they striking to look at, but they lay those beautiful blue eggs that Ameraucanas are so well known for.

Ermine Ameraucana feather patterns will be White, Black or Dalmation pattern.

They’re calm, curious, and great with families or mixed flocks. Plus, they're cold-hardy and adapt really well to different environments, so they're a solid choice whether you're a seasoned chicken keeper or just starting out.

Lavender Ameraucana

Lavender Ameraucana – Cool-Toned Beauty with Stunning Blue Eggs

Our Lavender Ameraucanas are one of the calmest, prettiest, and most consistent blue egg layers on our farm—and we’re so proud of the line we’ve developed here at Paragon Hatchery. With their soft, silvery-lavender feathers and signature muffs and beards, these birds are just plain gorgeous in the yard.

Ameraucanas have been around since the 1970s in the U.S., originally developed from Araucanas to preserve the true blue egg gene without the breeding challenges that came with rumpless birds. The lavender variety is a bit newer and still rare in quality form, which is why we’ve worked hard to keep our flock consistent in both appearance and performance.

Our Lavender Ameraucanas have been selectively bred for:

Ayam Cemani

Ayam Cemani – The All-Black Bird of Mystery and Majesty

Our Ayam Cemani are unlike anything else you’ll see in the chicken world—and honestly, they never stop turning heads. From their jet-black feathers to their black skin, combs, wattles, beak, and even bones, these birds are truly something special. Their dramatic appearance comes from a rare genetic trait called fibromelanosis, and it gives them that stunning all-black look inside and out.

Originally from Indonesia, the Ayam Cemani has long been regarded as a sacred and mystical bird. They’ve only been available in the U.S. for a short time, and even now, true, high-quality Cemani lines are hard to find. That’s why we’re so proud of the flock we’ve invested in at Paragon Hatchery. We’ve are selecting for deep black pigmentation, strong conformation, and healthy, active birds.

While Cemani hens aren’t heavy egg layers, they do produce cream to lightly tinted eggs, which is a fun contrast to their black appearance. These birds are more than just eye candy—they’re alert, intelligent, and excellent foragers, with a calm presence and a lot of personality. Double Silver Laced Barnevelders

Double Silver Laced Barnevelder – Rare, Refined, and Absolutely Gorgeous

Our Double Silver Laced Barnevelders are a true gem in our breeding program at Paragon Hatchery, and every time we walk past them, we’re reminded just how stunning chickens can be. With their crisp white lacing over a charcoal-black base, these birds look like they’ve stepped right out of a painting.

Originally, Barnevelders came from the Netherlands and were prized for their beauty and utility. The silver-laced version is a rare color variety, and the double lacing makes them even more eye-catching and unique. We’ve put serious effort into maintaining clear, even lacing and strong feather quality with every generation we raise.

These birds aren’t just beautiful—they’re practical, too. Coronation Sussex

Coronation Sussex – Regal Looks, Gentle Temperament, and Big, Beautiful Eggs

Okay, if you’ve never seen a Coronation Sussex in person, you’re seriously missing out. These chickens look like royalty—literally. They were originally bred in the UK for King George VI’s coronation in 1937, which is where their name comes from. With their clean white feathers, soft lavender-grey tail and neck accents, and upright, broad stance, they truly have a regal presence in the yard.

They’re a large, dual-purpose heritage breed, and they're super friendly and easy to handle—great for kids, families, or anyone who just wants a sweet flock. They're also one of the best breeds for consistent large cream eggs, even during the colder months. They're not flighty or skittish, and they do well free-ranging or in a run. Just an all-around solid breed with a lot of charm.

Black Copper Marans

Black Copper Marans – Dark Egg Royalty with a Proven Lineage

If you're looking for deep, rich chocolate-colored eggs and chickens with serious elegance, let me introduce you to our Black Copper Marans—a breed we've spent the last four years selectively developing here at Paragon Hatchery. These birds are our personal line, carefully bred and refined from some of the best genetics available in the United States.

Our original flock started with lines from Bev Davis, April Howington, Greenfire Farms, and Little Peddlers—names that are trusted by Marans breeders everywhere for their quality and depth of color. Since then, we’ve been breeding for consistency in egg darkness, feather quality, temperament, and type. The result? A flock that we’re truly proud to call our own.

Black Copper Marans are famous for laying some of the darkest eggs in the chicken world, ranging from deep mahogany to almost black. No two eggs are quite the same, which makes every egg basket a work of art. But beyond the eggs, these birds are also stunning to look at—glossy black feathers with copper highlights around the neck and chest, plus that classic French feathered leg.

They’re calm, hardy, and adaptable. While they’re not the highest-volume layers, their egg quality more than makes up for it, and they’re just plain fun to raise.

Crested Cream Legbar

Crested Cream Legbar – Stylish, Smart, and Sky-Blue Egg Layers

Our Crested Cream Legbars are one of the most charming and productive breeds we raise at Paragon Hatchery, and what makes them even more special is that our entire flock comes from the legendary show lines of Cindy Bailey’s champion birds. These aren’t just any Legbars—they’re bred from proven winners, with beautiful type, sharp crests, and excellent egg color.

Crested Cream Legbars were originally developed in the U.K. in the 1930s and are best known for two things: their adorable crests and their stunning sky-blue eggs. They’re also an auto-sexing breed, which means you can tell males and females apart at hatch by their color pattern—an absolute game changer for breeders and backyard keepers alike.

These birds are active, intelligent, and naturally curious, making them great free-rangers and a lot of fun to watch. They’re not overly cuddly, but they are calm and easy to manage, especially in flocks that have room to roam.

Indio Gigante

Indio Gigante – The Tallest Chicken Breed in the World (And Full of Surprises)

If you’ve never seen an Indio Gigante in person, prepare to be blown away. These birds are massive—literally the tallest chicken breed in the world, with roosters often reaching over 3 feet tall! But what’s even more surprising? For all their size, they’re gentle, calm, and super fun to raise.

Originally developed in Brazil, the Indio Gigante (which translates to “Giant Indian”) was bred for meat production, combining height, strength, and fast growth with a docile temperament. They’re still fairly new in the U.S. and incredibly rare, which is exactly why we’ve started working with them here at Paragon Hatchery.

They’re slow to mature compared to other breeds, but totally worth the wait. When they’re fully grown, they’re impressive and elegant, with long legs, upright posture, and a confident but mellow attitude. Despite their size, they get along well with other chickens, making them great for mixed flocks—just make sure you have tall fencing and roomy housing!

Our Indio Gigantes lay large to extra-large light brown eggs, and while they’re not known for high-volume egg production, they more than make up for it in uniqueness, presence, and conversation-starting looks.

Olive Egger

Olive Eggers – Dark Green Egg Layers, Carefully Crafted at Paragon Hatchery

Our Olive Eggers have been a true labor of love here at Paragon Hatchery—the result of over three years of intentional, selective breeding to create those rich, dark green egg tones that chicken lovers dream about. These aren’t your average olive layers. We’ve worked hard—generation after generation—to build a flock that consistently produces deep, dark olive green eggs, and we’re only getting better.

We started with a very selective line of F1 Olive Eggers, choosing only those that laid strong olive tones and came from healthy, well-typed birds. From there, we backcrossed those F1 hens to one of our Black Copper Marans roosters, carefully chosen from a line known for laying some of the darkest chocolate brown eggs we’ve ever seen. That produced our Backcross 1 (BC1) Olive Eggers—these birds are the ones laying the beautiful deep green eggs you’ll see in our egg basket photos.

But we didn’t stop there.

We’ve now developed Backcross 2 (BC2) Olive Eggers, and we’re incredibly excited about what’s coming next. These birds are expected to lay even deeper green eggs, from true olive to army green, even into Kalamata shades. It's taken time, patience, and a lot of picky breeding choices, but the results are worth it. Every egg that goes into our baskets has been earned through generations of refinement.

These Olive Eggers are not only stunning egg layers—they're hardy, friendly, and a perfect addition to any rainbow egg basket. Whether you’re a breeder, homesteader, or just love the thrill of opening a carton filled with colors, our Olive Eggers bring something truly special to your flock.

Salmon Faverolles

Salmon Faverolles – Sweet, Fluffy, and Full of Personality

If you’re looking for a breed that’s as charming as it is unique, you’re going to fall in love with our Salmon Faverolles. These birds are the true sweethearts of the flock—gentle, talkative, and full of quirky personality. With their fluffy beards, feathered legs, and soft salmon-pink and white coloring, they’re as beautiful as they are lovable.

The Salmon Faverolles (pronounced “fav-uh-roll”) originated in France in the 1800s, originally bred as a dual-purpose bird for both eggs and meat. Over time, they became especially popular with backyard keepers and poultry shows because of their striking appearance and calm, friendly nature. They're often the first to greet you at the coop door and tend to do well even in mixed flocks—though they're happiest with other gentle breeds.

Vorwerk

Vorwerk Chicken – Eye-Catching, Hardy, and Full of Personality

The Vorwerk is hands down one of the most underrated breeds out there—and we’re totally in love with them here at Paragon Hatchery. They’ve got this bold, beautiful contrast: golden buff bodies with rich black heads, tails, and wing tips. They look like little show birds running around the yard, but they’re way more than just a pretty face.

The breed was originally developed in Germany in the early 1900s by Oskar Vorwerk, who wanted an attractive, dual-purpose chicken that could thrive on small farms and homesteads. Mission accomplished. They’re great layers of medium cream-colored eggs, and they’ve got a sturdy, compact build that also makes them a good table bird—if you’re raising for both eggs and meat.

What makes Vorwerks stand out personality-wise is how alert, active, and curious they are. They love to forage and stay busy but aren’t flighty or aggressive. They're also cold- and heat-hardy, making them a great all-around breed for different climates.

We’ve been working on building up quality Vorwerk lines here in the U.S., since they’re still super rare stateside. If you’re looking for a unique breed that turns heads, earns its keep, and brings a spark of personality to your flock, you’ll love the Vorwerk.
